Wendy’s Biscotti Recipes

With a little help from Mom

Basic Vanilla Biscotti

 

6 Tbsp softened butter

 cup granulated white sugar

2 eggs

1 tspn vanilla

1 Tbsp lemon juice

 tspn salt

1  tspn baking powder

3 cup all purpose flour

 

Orange Walnut Biscotti

 

6 Tbsp softened butter

 cup granulated white sugar

2 eggs

1 tspn vanilla

1 tspn orange extract

 tspn salt

1  tspn baking powder

3 cup all purpose flour

1 cup chopped walnut pieces

Preheat oven to 350 degrees.   Line a baking sheet with foil.  Using an electric mixer, beat red ingredients together.  In separate bowel blend green ingredients.  Then mix all ingredients together.

Divide dough in half.  Using floured/oiled hands, shape each piece into a log 9-12 inches long by 2.5 inches wide.  Bake 30-35 minutes, until golden brown.  Cool thoroughly on rack.  When cool, slice logs with serrated knife.  Bake 10 minutes, then turn over and bake additional 5-10 minutes.

 Each recipe makes 20-24 pieces.
